Wondering here i can find command line related to icons found behind ‘‘show application’’ button.
Also, is there a way to add icons to desktop ?

Desktop icons were complete removed from GNOME in 3.28 (before that it was possible to reenable them with gsettings set org.gnome.desktop.background show-desktop-icons true
)
The entries in the application menu are XDG Desktop Entries (more info at Desktop entries - ArchWiki)

Is it Rocky 8.6 or 8.7?
You can use desktop icons with Rocky 8.x and Gnome, for example by using Gnome “Classic”.
