Prometheus is great for metrics, but what about centralized logging? I’ve only used it a little, but Graylog really impressed me.
I think Graylog is great, but we should also look at is FluentD as well https://www.fluentd.org/, fluentbit is a pretty low profile service to collect metrics and logs.

This thread should probably be archived now as the decision is made (Prometheus and associated tools if you are interested).
What you are suggesting is not actually “monitoring” in my opinion. Centralised logging is a seperate problem, although one could use it as a source to raise alerts through the monitoring system. For what it’s worth, logging has also been decided and it ELK, not Graylog.
